Bean, tuna, and artichoke salad
- In a large bowl, combine the beans, tuna, artichoke hearts, red onion, and capers. Stir well to break up tuna.
- In a small bowl, whisk together the oil, half the lemon juice, oregano, thyme, and salt. Pour over the salad and gently add spinach. Toss well and add remaining lemon juice, if using.
