- Combine maple syrup, oil, and soy sauce in a bowl. Set aside
- Heat a grill pan (or regular skillet) over high heat.
- Season fish loins to taste with salt and pepper. Cook 2 or 3 minutes per side, or according to desired doneness, brushing fish with reserved sauce during cooking.
Side suggestion: Serve fish with grilled asparagus and rice vermicelli sprinkled with chopped green onions.
