Boks choy with sesame-orange vinaigrette
- Place a steamer over a large saucepan filled with water (the water shouldn't touch the steamer). Bring to a boil. Place bok choy in steamer. Reduce heat to medium-low, cover saucepan, and steam for 10 minutes or until bok choy is tender.
- Prepare an ice bath. Transfer steamed bok choy to ice bath and then drain.
- Whisk together the orange juice, tahini, tamari, and ginger in a large bowl. Add bok choy and stir to coat well. Garnish with sesame seeds.
