Coconut Milk Turkey Stir-fry
- Cook rice vermicelli according to package instructions. Set aside.
- Heat sesame oil in a wok or large skillet. Mix in turkey strips and brown. Add carrots and broccoli and continue cooking until vegetables are tender.
- Blend in coconut milk. Season with salt and ground black pepper to taste.
- Serve on a bed of rice vermicelli.
- Garnish with fresh chopped coriander, if desired.
