Cranberry and Coconut Balls
- Combine marshmallows and butter in a saucepan over medium-low heat for 3 to 5 minutes, stirring constantly. Remove saucepan from heat.
- Add vanilla and mix well. Add half of cereal and mix again. Add remaining cereal, cranberries and half of coconut flakes and mix until all ingredients are thoroughly coated.
- Let cool slightly. With buttered hands, shape mixture into small balls about 5 mL (1 tsp.) in size. Spread remaining coconut flakes and pistachios in a shallow dish.
- Roll balls in mixture and refrigerate.
