Cucumber and Avocado Soup
- In a bowl, gently combine cucumber, green pepper, green onions, avo-cado, minced coriander, lime juice, buttermilk, cream, salt, and pepper. Transfer half the vegetable mixture to a blender. Purée for about 30 seconds or until mixture reaches an even consistency.
- Return purée to remaining vegetable mixture and gently combine. Adjust seasoning to taste. Cover and refrigerate for 2 hours. Pour mixture into soup bowls. Garnish with tomato cubes and coriander leaves.
