Fruit raclette with balsamic vinegar reduction
- Pour balsamic vinegar and maple syrup into a small saucepan. Heat over medium heat for about 10 minutes, or until mixture is reduced by half and syrupy. Reserve.
- Fill raclette trays with Grisons meat or sausage coins and fi g or date; garnish each with a slice of cheese.
- Place prosciutto and sliced kiwi or honeydew in other trays and garnish each with a slice of cheese. Just before eating, sprinkle each tray with pepper and drizzle with the balsamic vinegar reduction. Accompany with walnut bread toast if desired.
