- Mix all syrup ingredients in a saucepan and bring to a boil. Allow to simmer for 15 minutes, stirring occasionally. Remove from heat.
- Strain syrup and store in fridge. Cut melons in half and remove seeds. Scoop out balls of melon and place in a large bowl. Pour syrup over melon and refrigerate until serving time.
- To serve, place melon balls in dessert dishes. If desired, fill dishes with very cold sparkling white wine and garnish with mint leaves.
