- Line a colander with a cheese cloth (or coffee filter) and place over a bowl. Pour yogurt into colander.
- Cover and leave in refrigerator 3 to 4 hours. This should yield approximately 125 mL (1/2 cup) of strained yogurt.
- Mix strained yogurt, cheese, salt and pepper in a bowl. Place 5 mL (1 tsp.) of duck rillettes in a pretty spoon (designed for appetizers).
- Add 10 mL (2 tsp.) of cheese mixture. Garnish with minced arugula and pomegranate seeds. To add variety to your appetizers, serve cheese mixture on pretty crackers or mini puff pastries.
Variation: Replace duck rillettes with onion confit.
