Goat Cheese-Stuffed Chicken Over Tomatoes
- Preheat oven to 190°C (375°F).
- Slice chicken breasts open butterfly-style. Place cheese slices in centre of chicken and insert basil leaves in between.
- Refold breasts and secure with a toothpick. Season thoroughly. Pour tomatoes into a baking dish. Place chicken on top. Drizzle with olive oil.
- Bake for 30 to 40 minutes until chicken is golden. Serve with pasta and a green vegetable.
