Grilled potatoes with feta and arugula
- Prick the potatoes a few times with the tip of a knife and microwave on HIGH for 2 minutes or until slightly softened. Slice into 2-cm (½-in.) rounds and grill 5 minutes per side or until golden and crisp.
- Toss together the arugula, potatoes, and dressing in a shallow serving bowl. Sprinkle with feta, chives, and bacon.
