Grilled Shrimp Cocktail Skewers
- Thread ingredients onto skewers in following order: onion, grape tomato, shrimp. Repeat. Finish with a piece of onion and a tomato.
- Lightly brush skewers with oil on each side and season to taste with salt and pepper.
- Preheat grill to medium-high and cook skewers, turning and basting regularly with cocktail sauce, until shrimp is cooked through (about 5 to 6 minutes).
- Arrange on a platter of shredded lettuce with lemon slices and additional cocktail sauce if desired.
