Grilled vegetable and aged cheddar crostini
- Preheat oven broiler.
- Arrange baguette slices on a baking sheet. Place under the broiler for a few minutes, until toasted. Reserve.
- In a skillet, heat vegetable oil over medium-high heat. Add vegetables and balsamic vinegar, and cook for about 5 to 7 minutes, or until vegetables are done. Season with salt and pepper to taste. Reserve.
- Place a piece of ham on each toasted baguette slice. Spread cooked vegetables evenly on top (about 1 tbsp. per crostini) and garnish with grated cheese.
- Place crostini on a baking sheet and broil for 2 to 3 minutes, or until cheese is melted and golden.
