Grilled vegetable sandwiches
- Preheat oven broiler. Place rack 10 cm (4 in.) from broiler element.
- Place sliced eggplant, zucchini, sweet pepper, and onion on a lightly oiled baking sheet. Brush with oil and season with salt and pepper. Broil for 10-12 minutes, turning at the midway point.
- Garnish the 4 slices of bread with grilled vegetables and goat cheese, top with the 4 remaining slices of bread, and serve.
