Haddock Fillets with Sautéed Vegetables
- Prepare the haddock and rice according to package directions.
- Heat the oil in a large skillet set over medium-high heat. Sauté the mushrooms for about 5 minutes or until golden.
- Add peppers and onion; sauté for about 3 minutes or until heated through. Season to taste with salt and pepper; stir in the vinegar. Top vegetables with the haddock fillets. Serve with rice. Garnish with basil.
