For the dipping sauces*
- Place all ingredients in a large, heavy-bottomed saucepan and bring to a boil. Reduce heat and allow liquid to reduce by almost half, or until desired consistency. For clearer broth, strain before serving.
Yield: 375 mL (1½ cups) each
Total time: -10 minutes, for the "yellow" dipping sauce
- 5 minutes, for the "pink" and "red" dipping sauces
Mix together all the ingredients and serve in ramekins alongside fondue.
