Lemongrass Jumbo Shrimp and Mandarin Slaw
- Combine lettuce with the carrot, peppers, onions, chilies and mandarin segments.
- Season lightly with salt and pepper.
- Heat oil in a large skillet set over medium-high heat.
- Stir-fry shrimp for 7 to 10 minutes or until opaque.
- Toss slaw with the vinaigrette and serve topped with the shrimp.
