Linguine with chicken and rosso pesto
- Bring water to a boil in a saucepan.
- Mix together the chicken strips and 30 mL (2 tbsp.) of rosso pesto in a bowl.
- Cook fresh pasta in the boiling water.
- Heat the oil in a skillet over medium-high heat, add the chicken and fry until cooked.
- Add the tomatoes and zucchini, and cook 2 or 3 minutes.
- Drain the pasta and toss with the remaining pesto. Incorporate the chicken, tomatoes, and zucchini.
- Garnish with shaved Parmesan and serve.
