Microwaved Haddock Fillets On The Go
- Cook couscous according to package instructions. Set aside.
- Put haddock fillets, salsa and black olives in a microwave-safe dish. Cover and cook fish fillets until they flake easily with a fork, about 3 to 5 minutes.
- In the meantime, steam the asparagus until tender-crisp.
- Serve fish over a bed of couscous, top with salsa, and accompany with asparagus .
