- Salsa: In a large bowl, combine diced tomatoes, avocado, mango, and onion with pepper, garlic, olive oil, and lime juice. Set aside.
- Grilled cheese sandwiches: Lightly butter bread slices on both sides, then top four slices with approx. 125 mL (½ cup) chicken, 80 g (2½ oz.) cheese, and 125 mL (½ cup) salsa. Cover each with a slice of bread to make four sandwiches.
- In a panini grill or a large skillet, brown grilled cheese sandwiches over medium heat on each side until cheese is melted.
- Serve with remaining salsa.
To make a nice looking salsa, make sure to cut the tomatoes, avocado, and mango in pieces of similar size. If you have leftover salsa, you can freeze it or use it as a topping on tacos, fajitas, or even as nacho dip.
