Onion and Chive Potato Galettes
- Boil potatoes until cooked, but still slightly firm. Allow to cool, then grate. Heat oil in a large, heavy-bottom skillet.
- Line skillet with potatoes to form a single layer. Sprinkle with onion and chives and season to taste. Cook over medium heat, pressing down on galette with a spatula.
- When bottom is browned, divide into four pieces and gently turn over each piece with spatula.
- Cook until other side is golden brown and slightly crisp. Serve galettes hot, garnished with chives.
