Oven-baked tarragon fries
- Preheat oven to 190°C (375°F).
- Slice potatoes into sticks, place them in cold water, and then drain and pat dry on a cloth.
- Combine all the ingredients in a large bowl and then toss the potatoes in the mixture to coat.
- Line two cookie trays with parchment paper and arrange the potatoes.
- Bake for 40 minutes, turning at the halfway point, until fries are golden brown.
