Papaya and pitahaya tapioca
- Heat the coconut milk, coconut water, and sugar in a saucepan. Bring to a boil. Add tapioca and simmer over medium-high heat for 4 or 5 minutes or until mixture thickens. Set aside.
- Divide mixture into dessert dishes. Refrigerate for 2 hours.
- When ready to serve, top with cut fruit.
