Pasta with capicollo and rapini
- Steam rapini and set aside.
- Heat oil in a large pan and fry garlic, Italian tomatoes, and dried tomatoes about 4 minutes.
- Add capicollo and continue cooking 2 minutes to heat.
- In a large saucepan, mix together pasta, rapini and tomato mixture. Add bocconcini and basil.
- Mix together well. Garnish with grated Romano cheese to taste.
