Quick linguine with chicken and rosso pesto
- Cook pasta according to package directions. Drain and set aside.
- Mix together the chicken strips and 30 mL (2 tbsp.) of pesto in a bowl.
- Heat the oil in a skillet over medium-high heat, add the chicken, and heat for 1 minute.
- Add the tomatoes and zucchini, and cook for 3 minutes.
- Toss pasta with the remaining pesto. Incorporate the chicken and vegetables.
- Season with salt and pepper.
- Garnish with shaved Parmesan and serve.
