Raspberry and apple tofu dessert
- Marinate raspberries in apple must.
- Remove one third of berries and purée. Strain, and then gently fold into reserved whole raspberries. Divide berries into 2 dessert dishes.
- Whisk honey into silken tofu, and spoon mixture onto rapsberries.
- Refrigerate dishes for a few hours. Garnish with crumbled amaretti cookies and chocolate shavings.
