- Purée raspberries, sugar and orange juice in a food processor. Transfer mixture to a bowl and cover with plastic wrap.
- Place in freezer for 3 hours or until almost firm. Blend again in food processor and leave in freezer for another 3 hours.
- Remove from freezer 20 minutes before serving.
- Serve in scoops accompanied by fresh raspberries and a mint leaf.
Variation: Replace raspberries with strawberries, mangoes or pears.
