Spiced Pork Loin with Orange and Nuts
- Preheat the oven to 160˚C (325˚F).
- Place the pork loin in a roasting pan. Combine all the ingredients in a small bowl and pour over the roast, ensuring that the pecans are evenly distributed on top. Insert a meat thermometer in the centre of the roast.
- Place in the oven and roast for 1 hour 30 minutes or until the meat thermometer reads 70˚C (160˚F). Baste frequently with the pan juices. Remove from the oven, cover with aluminum foil, and let stand for 15 minutes.
- Spoon pecans and pan juices over each slice and serve with a mixture of white and wild rice.
