Steelhead trout and pesto in a packet
- Preheat barbecue to medium-high.
- Clean steelhead trout fillet.
- Place on a large sheet of aluminum foil.
- Season with salt and pepper to taste.
- Spread basil pesto evenly over trout fillet.
- Top with onion and sweet peppers and finish with broccoli florets.
- Pour on a thin stream of olive oil or white wine to taste.
- Close packet to make an airtight seal.
- Bake on the barbecue for 10 to 12 minutes.
- Serve with potatoes cooked on the barbecue.
