Salmon tartare with ground cherries and strawberries from Geneviève Everell
- In a bowl, mix the fennel with half the lemon juice, steak spices, and olive oil. Marinate for about 20 minutes.
- In another bowl, mix the two types of salmon together with the ground cherries, strawberries, tempura, chives, mayonnaise, and remaining lemon juice. Season with salt and pepper.
- For a nice presentation, arrange a bed of marinated fennel on each plate and top with tartare.
