Thai Satays with Vegetable Noodle Salad
- Prepare satays according to package directions, seasoning to taste with salt and pepper.
- Transfer sauces included with satays to small bowls; reserve.
- Soak the noodles in a bowl of hot water for 10 minutes or until soft; drain well. Cut the carrots into matchstick-size pieces.
- Toss the noodles with the carrots, celery, mango, radishes, nuts, coriander and vinaigrette in a bowl. Transfer noodle mixture to a platter. Serve topped with the satays and with reserved sauces on the side for dipping.
