- Mix together the tilapia, figs, cucumber, tarragon, mayonnaise, olive oil, orange zest, and lime juice in a bowl. Season with salt and pepper. Refrigerate.
- When ready to serve, mix crumbled chips into the tilapia mixture. In the centre of each plate, fill a cookie cutter with tilapia mixture, shape it, and remove the cookie cutter.
- Sprinkle with crumbled chips.
