Turkey quesadillas with cranberry sauce
- Preheat oven to 375oF (190oC). Toss turkey with red pepper, onion, corn, mushrooms and seasoning mix in a bowl.
- Sprinkle one side of each tortilla with equal amounts of half the cheese and the full turkey mixture. Sprinkle remaining cheese on top; fold tortillas in half.
- Heat 1 tbsp (15 mL) of the oil in a large non-stick skillet set over medium heat. Cook quesadillas in batches for 1 minute per side or until golden, adding more oil to skillet if necessary.
- Transfer to a parchment paper-lined baking sheet and bake for 10 minutes or until heated through and crisp. Serve with cranberry sauce.
