- Preheat oven to 180°C (350°F).
- Sprinkle both sides of medallions with steak spices. In an ovenproof skillet, heat oil over medium-high heat. Sear medallions for 1 minute on each side. Transfer to oven and cook for 10 to 12 minutes, or until desired doneness. Remove medallions from skillet and keep warm.
- Place skillet on medium-high heat and add red wine, scraping bottom of pan to remove browned bits. Add beef consommé, black currant jam and cornstarch diluted in orange juice, whisking constantly. Reduce heat to low and allow to simmer 1 minute, whisking often.
- Serve medallions with red wine and black currant sauce spooned over top.
: Replace black currant jam with another berry jam, such as blueberry, blackberry, raspberry or strawberry.
