- Heat veal stock in a pan over high heat until reduced by three-quarters, about 30 minutes. Set aside.
- Heat butter in a pan and fry onions over high heat for 3 minutes. Add apricots, garlic, parsley and reduced veal stock. Season with salt and pepper.
- Let simmer over medium heat until thickened, about 10 minutes.
- Cook wing steaks to desired doneness and serve with hot stewed onions and apricots.
