 It’s a fact: Quebeckers just love their Québec cheeses. It’s a passion that has inspired our cheese artisans as they rack up awards both here at home and abroad.

La dame du lacIt took courage to create a semi-soft, bloomy-rind cheese using 10% skim Jersey cow’s milk.

Quand nous avons créé cette pâte demi-ferme à croûte lavée, je voulais offrir aux gens un nom qu’ils connaissaient déjà. Comme ce fromage était fait de lait de vache et de chèvre, je me suis inspiré du conte La chèvre de Monsieur Séguin.

La tomme de brebis de Charlevoix

I’m proud of my Tomme, a firm, washed-rind farmhouse cheese made from 100% sheep’s milk. It is ripened for at least four to six months, allowing it to develop all the floral aromas of Charlevoix pastures.

Blackburn

Gilles Blackburn - Fromagerie Blackburn

I bought a press just for making this firm, surface-ripened cow’s milk cheese. Using high pressure, we were able to impart the qualities of a farmhouse cheese aged for three years, with spice and grilled hazelnut aromas.

Louis Arsenault - Fromagerie des Grondines

I invite clients to come visit us and see how we produce Grondines, a hard farmhouse cheese made from raw cow’s milk. It has a washed rind, the taste of roasted nuts, and a melt-inyour- mouth texture.

For me, Le Voyageur, named after Curé Labelle’s famous train, is the embodiment of our company. It’s a semi-soft washed-rind cheese made from cow’s milk, with floral and smoky aromas and a slightly nutty flavour.
