IGA tips and tricks: Cook the whole fish

Directions :

  • When buying, ask the fish expert for a fish that is scaled and cleaned. Fish that works well for this type of cooking includes sea bream, snapper, and sea bass.
  • Preheat the oven to 180°C (350°F).
  • Place the fish fillet on a work surface and pat it dry using paper towel.
  • Stuff it with your choice of flavourings. We suggest lemon slices, orange slices, and a few sprigs of dill or fennel. Season to taste with salt and pepper.
  • Enclose the fish in foil wrap, being sure to close all openings.
  • Bake in the oven for 10 minutes per each 2 cm (1 in.) of thickness. The fish is cooked when its flesh separates easily from the backbone.
