IGA tips and tricks: Cut the tartare-grade salmon

Directions :

  • Ask the fish expert for tartare-grade salmon and keep it chilled until ready to use. During preparation, it is recommended to place ther fish in a bowl over ice to retain maximum freshness.
  • Place the fish on a work surface and cut into 1-cm (½-inch) slices. Place the slices flat on the work surface, cut into 1-cm (½-inch) strips, and then into tiny cubes. As you cut, place the cubes immediately into the bowl over ice.
