IGA tips and tricks: Barbecuing fish on a wooden plank


  • Use wooden planks for fish with delicate flesh or simply to add a distinctive aroma and flavour to your food. You can find cedar and maple planks at IGA. 
  • Soak plank in water, white wine, or beer for at least four hours. 
  • Preheat barbecue to medium. 
  • Season salmon to taste. This salmon was seasoned with olive oil, snipped dill, Fleur de sel, and ground pepper. 
  • Heat plank only for about 3 to 4 minutes. 
  • Place salmon fillet on plank and cook for about 20 to 30 minutes. Since plank cooking is indirect, please note that the cook time is twice as long as for direct cooking. 
  • If plank becomes very black or catches fire, go ahead and spray it with water during cooking.
