IGA tips and tricks: Stuff and tie a pork tenderloin

  • Preheat the oven to 200°C (400°F).
  • Place the pork tenderloin on a work surface and slice it along its length, leaving the ends intact. Open it like a book.
  • Stuff with any filling of choice (e.g. raspberries and goat cheese, dried cranberries and Brie, asparagus and cheddar).
  • Tie it together using butcher's twine, forming four sections along its length.
  • Bake in the oven for 15 to 20 minutes, or until internal temperature reaches 70°C (158°F).
