Parmesan tuiles

  • Preheat the oven to 180°C (350°F).
  • Line a baking sheet with parchment paper.
  • Grate Parmesan onto the baking sheet and shape it as you wish. For bowls, make 10-cm (4-in.) circles.
  • Bake in the oven for 5 to 7 minutes, or until Parmesan is lightly golden brown.
  • To shape a bowl, gently place the discs over a bowl or over the underside of a muffin tin while the cheese is still hot. Let cool.
  • To serve, break a Parmesan tuile and sprinkle the pieces over a salad, top a tuile with tartare, or simply eat one plain. As for the bowls, fill them with whatever you like.
