IGA tips and tricks: Poach the shrimp

Directions :

  • Prepare a court-bouillon in a large saucepan and strain it. See our court-bouillon recipe.
  • Bring the court-bouillon to a low boil over medium heat and add the shrimp. Cook for 1 to 2 minutes.
  • Remove shrimp using a slotted spoon and transfer to a bowl of ice water to stop the cooking process.  

Definition of court-bouillon: A flavoured liquid used to poach, cook, or boil fish and shellfish.
