- Prepare a court-bouillon in a large saucepan and strain it. See our court-bouillon recipe.
- Bring the court-bouillon to a low boil over medium heat and add the shrimp. Cook for 1 to 2 minutes.
- Remove shrimp using a slotted spoon and transfer to a bowl of ice water to stop the cooking process.
